SAFFRON
Saffron is a spice, and is one of the most powerful antioxidants existing in nature. The saffron in this package is pure and has not been mixed together with other substances. Inside you will find pure flower stigmas, not in powder form. This means that no other ingredients could be added to the saffron, as it often happens with other ground products. The purity of the saffron explains the higher price, the difficulty in dosing and in preparation.
Powdered saffron is ready to use, while the saffron stigmas must stand steep in lukewarm water at least for three hours before adding them to the meal after cooking. This spice, if cooked, while maintaining its beneficial properties, surely loses flavour and its distinctive aroma. This is why the saffron should always be added at the end of cooking, after being placed in few lukewarm water.
There are many recipes for appetizers, main courses, desserts and liqueurs with saffron, but the one that surely represents this spice at best is the saffron risotto. Please find below the recipe that we use for its preparation.
Pack: 0,25gr
Ingredienti ( 6 persone ):
- white wine
- Parmesan cheese
- meat or vegetable stock
- salt and chili
- 0,25 g saffron
- butter
- ½ onion, finely chopped
Preparation: Four hours before the preparation of risotto, add a teaspoon of lukewarm water to the saffron and cover the bowl. Bring stock to a low simmer in a medium pot. Place some butter and the chopped onion in a large pan, wait for the onion to be translucent and add the rice. Sauté until rice is translucent and add about half glass of white wine, stir until rice has absorbed the wine and continue cooking, adding gradually the warm stock. When the rice is cooked and dry, add saffron and the remaining stock. Stir until the rice is evenly coloured. Add Parmesan cheese and/or chili as you wish. Serve hot and...enjoy your meal!
